Cleaner and less fruit-forward than most Brazilian naturals, leaning into roasted nuts and baking spice instead of heavy fruit.That comes from the natural process: whole cherries dry with the fruit still on, letting those sugars work their way into the bean as it dries. Less intervention than washed coffee, more influence from the fruit itself.This lot comes from Fazenda Um in Minas Gerais, Brazil, run by Stefano Um.
