Gator Jigsaw

"The Green Bite"Gator Jigsaw brings an unmistakable mustard-green look and sweet, fruity character to a single-pepper limited edition. These big, irregular pods are distinctive before the first taste. This is pure Gator Jigsaw, not the Atomic Gator blend.Heat and FlavorEvery harvest is lab-tested by HPLC; the result for the harvest you are viewing is shown above. Gator Jigsaw lands in the Hot tier, in the same territory as No. 4 Habanero in the SpiceQuest Pro Kit. Sweet, fruity pepper flavor gives it a place at the table beyond sheer heat. Start with a small amount and build to taste. The PepperGator Jigsaw is a Capsicum chinense variety known for large, irregular pods that mature to a yellowish-green or mustard tone. That green appearance is part of its character, not a reason to assume the pepper is unripe. It was bred by Italian master breeder Rocco Maltesi and helped define the mustard superhot phenotype. For more about the variety and its place on our heat scale, explore the Gator Jigsaw Field Guide.Culinary Uses Add a small push to green salsa, tacos, or eggs. Finish grilled vegetables, chicken, or fish with freshly ground pepper. Stir into hot sauces, beans, and marinades for fruity heat.
