The gyuto is the workhorse of the kitchen — versatile, precise, and capable of handling nearly any task. The Black Elm Gyuto is crafted from reclaimed century-old high carbon sawmill steel, hardened to approximately 61HRC for exceptional edge retention. Its forged distal taper gradually reduces the blade's thickness toward the tip, creating a fine, responsive edge that moves effortlessly through everything from delicate herbs to substantial cuts of meat. At 208mm, this gyuto offers an ideal balance of reach and control. The 46mm blade height provides comfortable knuckle clearance, while its 130-gram weight makes it remarkably nimble for a full-sized chef's knife. Whether tackling everyday prep or more demanding kitchen work, it's a knife designed to feel like a natural extension of the hand. The wa-style handle combines deep black stabilized elm with a contrasting ferrule of richly coloured roasted maple. Subtle tapers ground into either side of the ferrule create a natural, comfortable pinch grip, adding both function and a distinctive visual detail. The interplay between the dark elm and warm maple gives the handle an understated elegance that complements the character of the forged steel. A handcrafted heirloom for the serious home cook or professional chef — built to be used, and built to last generations. For current production times, please visit our knife info page. This steel is known for its edge retention and durability. However, unlike stainless steel these blades will naturally oxidize over time and gain a beautiful patina.
