MRAZ FAMILY FARMS - YEAST WASHED - FIELD BLEND

This Field Blend comes from Mraz Family Farms, a project of Grammy-winning singer-songwriter Jason Mraz, in Oceanside, California. One of the older farms in the FRINJ network, it grows a wide assortment of coffee varieties intercropped with avocados and exotic fruits like finger limes. This lot bundles everything together into a single mix, producing a unique coffee evocative of the totality of Mraz Family Farms itself. (Also, for what it’s worth, the farm is certified organic.) This particular lot was hand-picked at peak ripeness, held overnight in a cold container, and sent to our mill in Ventura. It was then floated to remove defects, pulped, and fermented with an added yeast-inoculation step for 43 hours before being washed and laid to dry on raised beds for 11 days, reaching a stable moisture content below 11%. In the cup we find a sweet and candied profile with notes of pear, nougat, and malted chocolate.
